Healthy Wrap Recipe On-the-Go

Now that the weather is finally looking up, I will be spending all of my extra time outside. But just because I love living life on-the-go, doesn't mean I always love eating out. I think it's important to prepare food ahead of time to save money and to stay healthy. Because of this, I am constantly thinking of recipes I can create that are perfect for taking with me on adventures, but also recipes that I can make in under thirty minutes.

Today's recipe is all about the wrap! Using the new Smithfield Marinated Boneless Pork Shoulder Seasoned Carnitas, which I found at Walmart, I created wraps for my friend Ariel and I to enjoy on our bike ride. It was the perfect lunch to eat halfway through our ride to reenergize and fuel us for the ride home. I loved that I was able to create such a delicious meal for us using Real Flavor Real Fast!

Pork Carnitas Wrap Ingredients
Smithfield Marinated Boneless Pork Shoulder Seasoned Carnitas
Ezekiel Wraps
1/2 Orange Pepper
1 White Onion
1 Sweet Potato
Hummus
Greek Yogurt
Cilantro
Coconut Oil

Directions
First, chop up all of your vegetables as well as the Smithfield Marinated Boneless Pork Shoulder Seasoned Carnitas. In a frying pan, melt 1 tbsp of coconut oil. Once the pan is covered in coconut oil, add your chopped Smithfield Marinated Boneless Pork Shoulder Seasoned Carnitas. Once the pork has begun to brown, add in the chopped sweet potato (you need to add this vegetable first because it takes longer to cook). When the pork is almost fully cooked, add in the onion and pepper. Sauté the ingredients together until they're cooked through.
To create your wrap, you'll first need to cover half of your Ezekiel wrap in hummus and half in greek yogurt, then, add your pork and vegetable mixture down the center of the wrap. Fold the ends into the center and wrap it up tight! If you plan to eat it later, wrap it inside some tin foil and stick it in the fridge.

My favorite part about this recipe is that I have plenty of leftovers for tomorrow, as well! Now I just need to decide what sort of adventure I want to take...
